Dr. OmeeraAyob is an academician, researcher, and food safety professional with over 10 years of experience in Food Science, Food Safety, and Research & Development. She holds a Ph.D. and M.Tech in Food Science and Technology, and completed her doctoral research in 2022 on aflatoxin decontamination using irradiation technology in collaboration with the Bhabha Atomic Research Centre (BARC), India. Her research work was supported by the Council of Scientific and Industrial Research (CSIR), India, where she also served as a Senior Research Fellow. Dr. Ayob has authored and co-authored more than 15 publications in reputed international Q1 journals. She currently serves as Assistant Professor at Manipal Academy of Higher Education, Dubai Campus, teaching Food Safety Regulations, Halal Assurance, Food Science, and Nutrition. Her research interests include food safety, halal assurance, sustainable food systems, and Artificial Intelligence applications in the farm-to-fork food supply chain.
